Abstract

This article presents the results of research on the technology for obtaining a bioactive natural dye from the peel of Juglans regia fruits, as well as the study of its physicochemical and biological properties. During the research, walnut peel raw material was dried, ground, and a natural pigment was extracted using the extraction method. The effects of solvent type, temperature, extraction time, and medium pH on the extraction process were investigated. It was determined that the obtained extract contained juglone, flavonoids, tannins, and other phenolic compounds. The color-forming and bioactive properties of juglone were analyzed. The research results showed that the obtained natural dye had a dark brown color, dissolved well in water and alcoholic media, and exhibited antioxidant and antimicrobial activity. In addition, the stability of the natural dye against light and temperature was evaluated. The obtained results demonstrate the possibility of producing environmentally safe, biologically active, and import-substituting natural pigments from local plant wastes.
